The oil and the oil mill

The cellar

In the fields of "Borgo di Toppo" organic farm the olive groves, consisting of about 3000 plants, are located at a height between 400 and 500 meters and south-facing, where they can happily enjoy a highly favorable microclimate. This situation helps the plants to carry out the production cycle safely and without any parasites as the olive fly.
The prevailing cultivars of the Borgo di Toppo olive groves are Leccino, Frantoio and Dolce Agogia. They are fertilized with organic fertilizers (from animals raised with organic food) given to the plants during the growing season, that is in spring. The olive harvest in our area is generally from early November to mid-December strictly carried out by hand, according to the "stripping method". The production chain starts and ends inside our farm where we personally follow the cultivations, processing, bottling and marketing of our extra virgin olive oil. The freshly picked olives arrive at the mill of Borgo di Toppo within 24 hours to be worked. The processing is done rigorously at cold, it means that water it's always at low and constant temperature (Max. 24°). The quality result of our extra virgin olive oil is guaranteed first of all by the high quality of raw material used (km 0) and then by complying with all the essential rules for creating a real extra virgin olive oil of superior quality.
At the end of the production cycle our extra virgin olive oil it's not filtered but placed in special steel drums where filtration happens in a natural way, that is through the passing of time. In this way the oil preserve its beneficial and tasty characteristics longer.

The Oil

The Extra Virgin Olive Oil of the organic farm "Agricola il Toppo" is obtained from the pressing of the olives grown in our farm and only by mechanical way.
Leccino, Frantoio and Dolce Agogia are cultivars raised in our hills and their picked olives are brought to the mill and cold processed (max. 24°C) within 24 hours of harvest. The harvest is obviously made by the method of stripping (by hand) during early November to end December. The chain begins and ends inside our farm and this guarantees the absolute quality of the raw material and of the final product too. The oil has a strong flavour with a pleasantly and intense spicy note. The color is emerald green.
