In the wine cellar of Borgo di Toppo is produced Rosso di Toppo red wine. It's a lovable table wine made with 70% Sangiovese and 30% Merlot which are grape varieties growing in a favourable south-facing position along the hills surrounding the Borgo.
About our two vineyards, one of these has a longer history because it was planted more than forty years ago by a family member and now produces only black grapes. The other vineyard, much younger, has been recently enriched by vineyards of chardonnay that will give us their precious white grapes very soon. The steps leading to the birth of the wine change from year to year depending on the climate variability of the seasons. However, usually during the year we made two types of pruning: the first one in February called "cordon" and the second one from June until mid-July called "green pruning".
The treatments made on our vineyard are provided by organic farming. We use only copper and sulfur sprayed on plants in the period from early May until the end of July, usually every 10 days but it depends on the climatic conditions.
Rosso di Toppo is an organic wine for our cultivation methods and for the limited use of sulphites too.
Even the harvest depends on the climatic conditions, however, the harvest period is usually from the end of September to early October.

The vineyards from which it comes are south-facing and stretched along the hills that surround the entire organic farm "Agricola il Toppo". The 2011 harvest that is currently on sale led to the birth of a red wine with an intense ruby colour, harmonious and well structured.
Serving temperature: between 16 °C and 18 °C
Alcohol: 14% Vol.
Pairings: cold cuts, cheese, red meat and game.
